Palak Paneer Chicken Sandwich

Spinach Palak Sauce: In a large skillet, heat oil. Add onions, garlic, chili flakes and first listed ginger. Saute over medium high for about 5 minutes, stirring until onions are tender. Add coriander, cumin, turmeric and salt. Stir and sauté for 1 minute. Reduce heat to low, add sour cream to onion mixture, Simmer for 5 minutes. Add first listed spinach, stirring to wilt the leaves. Remove from heat. Place onion and spinach mixture in food processor. Process until smooth. Add second listed spinach, tomatoes, cilantro and second listed ginger. Puree until finely chopped. Return puree mixture to skillet, simmer on medium heat for 10 minutes.
Grilled Chicken Breast: Place chicken breast in a pan, cover with balsamic dressing. Marinate for 4 hours in refrigerator. Drain and discard excess marinade. Place chicken breast on medium high heat grill and cook for 3 to 4 minutes on each side.
For Service: Brush cheese on both sides with olive oil. Preheat grill to medium high heat. Place cheese on grill and cook for 2 minutes on each side. Split baguette lengthwise leaving one side hinged, Place one chicken breast on heel of baguette. Place 1 slice grilled cheese on top of chicken. Place 2 tablespoons sauce on top of cheese. Close sandwich.
